I am really liking this way eating, Plant Paradox Diet, and it is agreeing with me. Maybe grains/beans/lectins have been the issue all along. Just read Kelly Clarkson is doing this diet as well and it helped her lose weight. This is actually lunch and dinner: Grilled chicken, avocado, radish, cabbage, carrots, spinach, orange and leafy greens.
Seems very similar to AIP.

It's so hard. Well for me it is with a houseful of kids that are all involved in different sports, etc. Makes it hard to cook real food on late nights

I got the book a year ago, but I wanted to go the vegan route for at least a year, so it remained shelved. Now I wish I had started sooner!
Interesting. I am strict, strict vegan this summer to see if I can bring my numbers down in three months for my next labs. I am having trouble with my fingers and wrists. If the labs are not better (CRP 9.4), then I need to look at other options. My rheumy said that if the swelling is still there, then I need to add another med on top of mtx. Noooooo.....
I felt I did good on the vegan diet for awhile, but then just felt I was missing nutrients, just did not feel great. Adding fish back helped a lot. I am assuming the oils.
Yes... Missing variety, too. I cannot have any foods that contain oil. I suspect that oil has been the problem.
Do you use any dressing?
I cut half an orange and drizzle it on top of the salad and mix with the avocado. I think most people on this diet add oil to their salads. But I am not there yet. I used to smother my salads with dressing and now I like them plain, tastes buds have changed.

I am doing this diet. But leaving out chicken, because I cannot find the pastured chicken anywhere!!!
Going to drink my greens instead in smoothie form because I can only eat salads with store bought dressings. I have tried most homemade and they just don't cut it. But I do like coconut Aminos on cabbage slaw.
How do you make your home made dressings?

yes good fats I would think, that you need to keep your cholesterol in order.
That looks like my meals! I grade cabbage and do soooo much of whatever Green is in season ... Right now it’s asparagus !!
